Who is Cooking with Cutting Edge Firewood

I don’t have a fireplace but I love cooking with charcoal and wood. I have an Ooni Karu 12, a PK original, and a PKGO which means I need chunks or mini logs since my cooking devices are small. Received my order of mini pizza wood from Cutting Edge and was ready for football Sunday. I used 2 mini wood pieces in the pizza oven (with charcoal) and had the oven at over 800F within minutes. For the second half, i threw on some wings and brats into the PKGO which was also up to temp with a few charcoal chunks and one mini wood piece.Overall, I am very pleased. Before today and Cutting edge, I was breaking down firewood logs by hand which is some good exercise, but sometimes you just want some good quality wood without the hassle. Cutting Edge definitely delivered. A++

I run a small Ooni Pizza oven for a family of 7. Spend $189 for a single box of firewood??? Insane right? Well I will be reordering shortly!!!! You use high quality ingredients and this is high quality and VERY easy to use. Sizing is perfect and I can cook about 6 pizzas with 6 pieces of wood so a box lasts a long long time.Order and you won't regret it.

If you are thinking of getting the pizza cut for your Ooni I am here to tell you to just scrap the idea of the small box and go for the big one. Compared to your hardware store wood for smoking/burning this wood is night and day. It burns super clean and it just feels/looks like a superior product. I also just got a hand written note from Leroy thanking me for my orders which no one ever does but they are taking the time to do it which I think says a lot about their company-thanks!

I recently ordered from Cutting Edge Firewood for the first time. The experience was one of the best I have had in recent memory. Ashley called me shortly after my order to explain how it would be shipped and delivered and offered assistance with any questions I may have had. The wood and accessories showed up on time and perfectly packaged. The product itself is as great as the customer service. The wood is beautifully dried and smells wonderful. I also made sure to get some pizza oven cut Oak and it did not disappoint! Absolutely 100% satisfied... BRAVO!

pizza cut firewood

Pizza is one of America’s favorite foods, and science recently confirmed that cooking it in a wood fire oven is the best way to enjoy it. After closely studying how they work, a physicist confirmed the reason wood fire pizza tastes better than all other cooking methods is because wood stoves use convection heat to cook the base of the pie, while radiant heat warms the toppings to the perfect level of doneness. The ideal temperature for this process to take place does not match the normal temperature range for an electric oven, meaning wood fire is the safest and most effective way to enjoy the perfect slice. When cooking a pizza with wood, you also have the opportunity to infuse it with one-of-a-kind flavors by choosing high-quality aromatic wood, which produces a delicious smoke you can tailor to complement your toppings.

The benefits of using a wood-burning pizza oven go beyond the delicious taste they produce. Compared to other cooking methods, a wood fire gets hotter faster, which reduces cook time for many pies. Cooking with an authentic wood fired oven saves time, allows you to experiment with new flavors, and produces the perfect pizza? Sign us up!

Of course, the key to a successful pizza night depends on the quality of the wood in question. Fortunately, Cutting Edge Firewood has the top-quality kiln dried Pizza Cut Firewood you need to impress your friends and your tastebuds.

The Best Wood for Pizza Ovens. Period.

manage pizza firewood temperature properly

Designed specifically for wood-fired ovens, Cutting Edge Firewood’s premium pizza cut wood — harvested from strong, healthy oak trees — gives you the hottest and longest burns. We partnered with professional pizza chefs to study what makes a pizza taste great and found the key is to manage burn temperatures properly. The easiest way to control oven temperatures is by using pre-split wood in uniform cuts.

Our firewood goes through the most rigorous drying process in the industry, rendering it completely free of mold, fungus, or bugs, for a consistently clean flavor. Our wood is dry, so it is easy to light,  and dense, so it burns for longer amounts of time. When you use pre-cut wood, you don’t need to worry about the labor of selecting and drying your own fuel and can rest assured you’re making the best quality pizza possible.

Why Our Wood Has a Cutting Edge Difference

When you use wood from other suppliers — or even from your own backyard — you are burning wood that has too much moisture in it. This moisture content can create an excess of smoke and will not allow your oven to reach the high temperatures it needs, resulting in a less-than-perfect pizza. While seasoning wood is one method of drying firewood, it can take anywhere from several months to a year and exposes your wood to fungus, rot, disease, and insect infestation, and it is literally rotting, so it will not produce nearly as much heat or a quality flavor.

When you choose Cutting Edge Firewood for your pizza oven, you don’t have to worry about any of these things. Our wood burns brighter, hotter, and longer, and is beautiful enough to display in your restaurant or home.

why cutting edge firewood wood has a difference

As a valued member of the Cutting Edge Firewood family, you’ll enjoy the following:

  • Flavor: Use Pizza Cut.  Don’t just think of the wood as a fuel or heat source, think of it as an ingredient. With several types of wood to choose from, when you want to get more adventurous, you can select the best flavor to pair with your sauce, cheese, and toppings. Looking for something subtle and understated? Try Cherry. Want to try something a little more daring? Pecan is an adventurous choice.
  • Quality: Kiln dried firewood is an essential part of cooking a pizza in a wood-burning oven because it has been dried in a controlled, high-temperature kiln by experts who are passionate about their work. At Cutting Edge Firewood, we kiln dry all of our firewood 12 times longer than required by the U.S. Department of Agriculture (USDA), then hand-pick each and every piece of wood before shipping it to you. With all of our shipments, you will also benefit from uniformity — every box or rack contains the same size and shape wood, according to your specific needs. This uniformity allows for an even, predictable burn, and better flavor for your pizza.
  • Customer service: Whether you’re a home cook or the chef behind the neighborhood’s favorite pizza joint, the team at Cutting Edge Firewood understands that reliable, quality wood is critical. All of our pizza cut firewood and fire products are carefully selected, processed, and packaged to reach you quickly and safely.

Cutting Edge Firewood pizza cut firewood is compatible with the most popular pizza ovens in the industry, including:

  • Ooni Pro.
  • Ooni Karu.
  • Bertollo Wood Fired Oven.
  • Forno Piombo.
  • Alfa Oven.
  • Fontana Forni.

Our pizza oven firewood is suitable for use in most pizza ovens, but feel free to contact us with any compatibility questions!

Miniature and Full Sized Pizza Oven Compatible

mini and full size pizza wood

We offer two different cuts of Pizza Wood — miniature and full size. Each size comes in a variety of flavors for you to choose from, and there is no difference in quality, so you can choose whichever type of wood is compatible with the size of your pizza oven.

Miniature Pizza Cut for Smaller Ovens

For small ovens, you need our miniature pizza cut wood. Cutting Edge Firewood miniature pizza cut wood is about 6 inches in length and made for the Ooni Pro, Ooni Karu, Bertollo Wood Fired Oven, and other miniature pizza ovens.

Every piece of wood is dense and dry, creating long-lasting flames that are easy to ignite. Choose from either our standard 10-pound box or the larger 45-pound box. Miniature pizza cut wood ships for free and includes a selection of all-natural fire starters to make your experience even easier!

Full-Size Pizza Cut for Full Sized Ovens

full size pizza cut

If you’re using a full-sized pizza oven such as the Alfa Oven, Fontana Forni, or Forno Piombo, you need our full-size pizza cut firewood. Designed by and for pizza chefs, this wood burns hot for the incredible pizza quality you want.

Choose to receive them in boxes containing enough fuel for 20 to 30 pizzas, or our sturdy storage racks, which hold enough for 200 standard-sized pies. This is the best wood you will ever try for cooking pizzas!

Choosing the Right Firewood for a Pizza Oven

Not every type of wood is suitable for use in a pizza oven. For instance, softwoods will not give you the same heat or burn intensity that hardwood does, which will result in a lower-quality pizza. Our pizza cut wood is made from oak because it creates a hot, steady burn with low emissions. That said, many of our chefs and home cooks add flavored cooking splits to their wood ovens to create unique flavors.

When choosing your pizza oven firewood, consider the following:

  • Type: Pizza Cut is made from Kiln dried oak wood.  Pizza Cut is the best type of fuel for a pizza oven because it burns steadily and produces an intense flame. When you’re using wood for cooking — especially in your restaurant — quality is the most important factor to consider. When investing in kiln dried wood, be critical of the supplier you choose. Cutting Edge Firewood is passionate about helping you create good food and great fires, which is why we are unmatched in quality and service.
  • Size: Determine whether you need miniature or full-size pizza cut firewood, and calculate how large a shipment you require to meet your pizza-baking needs.
  • Amount: Are you hosting a one-night pizza event, or are you searching for bulk firewood for your restaurant? Opt for a box full of our quality wood, or order one or more stocked racks to meet greater demands.

Which Woods Give Pizza the Most Flavor?

which woods give pizza the most flavor

While oak makes for the perfect pizza wood, adding flavored 8-inch cooking wood splits to your oven while your pie bakes is a great way to play around with flavors and create a memorable dish. Popular flavors to consider include:

  • Hickory: Hickory wood is full of a savory, smoky flavor that is great for meat-centric pies, especially when they feature bacon, barbecue, or poultry. Hickory would be great for a BBQ pizza! But be careful —  Hickory will very easily overpower all other flavors. Use it very sparingly.
  • Pecan: Pecan wood creates a light, nutty flavor that pairs well with a variety of poultry, cheeses, and hearty vegetable toppings.
  • Apple: Apple cooking wood is sweet and mild, but it pairs perfectly with savory meats and veggie toppings. Use apple sparingly, unless you want the crust to have an apple taste.
  • Cherry: Cherry wood is our most aromatic cooking wood, and it infuses pizzas with a one-of-a-kind sweetness. It pairs exceptionally well with almost any meat.
  • Maple: With the growing popularity of flavor combinations like maple and bacon, adapt maple cooking wood to complement meat and cheese pies, or even a dessert pizza!

Cooking Pizza in a Wood Oven: FAQ

Looking to learn more about cooking with a wood-burning oven? Here are the answers to some of our most frequently asked questions.

How Does a Pizza Oven Work?

Depending on the type of pizza oven you’re using, heat is generated via firewood, charcoal, or electricity. The ovens are designed to trap this heat inside their walls and floors, which is how the pizza bakes. When flames are low or non-existent, pizzas will still cook at high temperatures. This is why it is essential that you allow your pizza oven plenty of time to heat thoroughly before you begin the cooking process. The larger your oven, the more time it needs to reach optimal temperatures.

Which Type of Pizza Oven Is Best for Me?

Whether you’re designing your own or investing in a top-tier model, there are a few things you should look for when selecting a pizza oven:

  • Type: Pizza ovens can be made of different materials, including metal, stone, and brick. Each type has its benefits and is designed to hold the maximum level of heat possible for baking pizzas to perfection. You should also carefully consider the brand you choose to work with. Do they have warranties or guarantees against damage or wear and tear? How is their customer service?
  • Size: For home cooks, miniature and residential-sized outdoor pizza ovens are usually enough to handle the occasional pizza night or weekday meal. For larger homes or pizza restaurants, you need larger ovens that can accommodate more than one pie at a time. Some home and business owners build an entire outdoor setup with an integrated oven, sink, and seating area.
  • Condition: When you use a pizza oven, it is critical that there are no cracks, chips, or gaps in the walls, floor, or door. These vulnerable areas will allow heat to escape, which will make it more challenging to bake your pizza evenly. The heat loss also means a longer wait until your pizza is finished.

What Is the Best Type of Wood for a Pizza Oven?

best type of wood for a pizza oven

Top-quality pizza calls for top-quality cooking wood. Wood burning pizza ovens require more than your standard cut of firewood. They need specialty-sized wood — typically oak — that has been extensively dried and cut to promote even cooking.

The best firewood for pizza ovens is wood that has been:

  • Carefully selected: You cannot harvest quality wood from weak, sick, or decaying trees. Cutting Edge Firewood sources every piece of wood from strong, healthy trees, so you know you’re getting quality from the start.
  • Expertly processed: Though a healthy tree is necessary, it’s only the start. Once the wood is harvested, it must be processed by experts who understand what makes quality cooking wood. This means drying the wood in a high-heat kiln, eliminating the risk for mold, fungus, or bugs.
  • Uniformly cut: Uniformity is a sign of high standards, and is essential when you need a steady, even burn. Wood cut to the same dimensions is also easier to stack and looks visually pleasing when on display.

Why Is My Pizza Oven Smoking?

Though some amount of smoke is typical when cooking with wood-generated flames, excessive smoke is a sign that something isn’t right. It can also be irritating to the eyes and hazardous when breathed in. If your pizza oven is generating more smoke than normal, ask yourself the following:

  • Are you burning cooking-grade firewood, rather than yard debris, pine straw, or leaves?
  • Is your wood thoroughly dry and free of mold and fungus?
  • Are you using a dense hardwood instead of softwood?
  • Is your pizza oven constructed correctly, free of gaps and cracks?
  • Is there enough room in the fire area of your oven for the flames to breathe and thrive?
  • Does your oven need to be cleaned?

If all of these things check out, consider consulting the oven manufacturer.

How to Cook Pizza in a Wood Oven

how to cook pizza in a wood oven

Once you have your pizza oven, firewood, and favorite recipe, it’s time to cook! When you have the right supplies and set-up, baking a delicious pizza is easy every time:

  1. Gather what you need: Ever heard the expression “mise en place”? It’s popular in professional and home kitchens and means “everything in its place.” By taking the time to gather all the ingredients and supplies you need before you create and bake your pizza, you know you have everything you need, right where you need it, instead of realizing halfway through the recipe that you’re out of your favorite sauce or don’t have enough wood. For oven-baked pizza, this means you need your ingredients, a pizza peel, some matches, fire starters, and plenty of pizza cut firewood.
  2. Heat the oven: Before you prepare your pizza, start heating the oven. Using a match and fire starter, build a fire in the firewood section of your pizza oven. Remember to keep the fire fed and stirred while the oven is heating.
  3. Prepare your pie: Depending on your recipe, preparing your pie could mean hand-making your dough and sauce or picking up your favorites from the local grocery store. Roll out your pizza dough into the desired shape and top accordingly. Use a long, heat-safe pizza peel to place the pie carefully in the oven.
  4. Wait for the magic: Now, it’s time to wait while the firewood and oven work their magic on your pie. Though it depends on your recipe and toppings, a wood-burning pizza oven works quickly, so you won’t have to wait too long. If necessary, use the pizza peel to move and rotate your pizza throughout the cooking process to ensure it does not stick and bakes evenly.
  5. Slice and serve: Now that all your hard work has paid off, it’s time to slice and serve your pizza. While the oven is hot, consider tossing in some homemade garlic bread or a fun dessert pizza to accompany your meal.
